Cadbury creme egg cupcakes recipe

Now I am no expert at baking and it normally goes really wrong, so when I say this is an easy recipe I mean it!

I got the recipe from taming twins here, but have written it out again for you below:

Makes 12 cupcakes

INGREDIENTS

150g Caster Sugar

150g Unsalted butter, softened

3 eggs (medium size)

1 Tsp vanilla extract

120g Self-raising flour

30g cocoa powder

12 Mini Cadbury Creme Eggs

For the icing:

175g Unsalted butter

350g Icing sugar

Egg yellow gel food colouring

75g Dark chocolate

Method:

Freeze your creme eggs, preferably over night but a few hours will do


Cream the butter and sugar


Beat in the eggs and vanilla essence


Fold in the flour mixed with cocoa powder


Put one spoonful of batter in each case and then lay a creme egg (on its side) in the batter


Then cover each egg with batter


Bake at 180 Celsius for 20 minutes

Once they are cooled make the icing, colour half of it orange/yellow and put 50:50 in a piping bag to decorate your cupcakes. I then decorated with cut up creme eggs and drizzled with melted chocolate.


*note: jack doesn’t like creme eggs so his are smarties filled and decorated. The kids did the decorating, sorry!

So easy, delicious and yet look great!

  1. These look so naughty !!! I love cream eggs I might have to give these a go as I have been volunteered to bake for nurseries Easter fair – if these don’t impress nothing will !!!
