Easy flapjack recipe

My husband likes to climb out of bed at the very last moment before work, so he often heads off without any breakfast. I have started making a breakfast flapjack bar so he can take it with him and eat on the way to work.

The recipe isn’t very exact (there are no accurate measurements) basically I use whatever is available. The base recipe is:

1/4 block of butter (don’t use margarine as it makes the flapjacks soggy and horrid)
2 tbsp ish golden syrup
1 tbsp brown sugar
Dried fruit

Melt the butter in a saucepan, with the syrup and sugar.

When it is bubbling well stir in the fruit and nuts/seeds etc, last add the oats until all oats are coated but it is still sticking together (this took me a few tries to get it right, you can always add more syrup or butter if it looks a bit dry).

Spread mixture into a lined dish and cook at 180 degrees C for approx 20 minutes.

Leave to cool and cut.

If you love dried apricots they work really well, but I slice them so they are smaller. You could add cashews/peanuts/chocolate/marshmallow/rice crispies/cornflakes/dried cranberries/dried peel/glacé cherries/dried apple anything works really, raid your cupboards and use up some left overs lol

This is a snack full of energy and keeps you going all morning!
