Slow cooker beef recipes: Filipino Beef Caldereta

I am no good at organising my weekly meals; I buy a bunch of different meat and freeze them, then in the evening I get out a frozen chunk for the following day, disorganised and no idea what I’m going to do with it!

So the other day I got out diced beef and decided I didn’t want to do my traditional beef stew so asked Epril if she had a suggestion. She recommended her native Beef Caldereta from the Philippines, which sounded delicious. I didn’t have the powdered spice mix so I had to adjust the recipe and use what I had at home. So here is my “English Style” beef Caldereta (don’t hate me if it’s nothing like the Filipino version, I tried lol)


400g Diced Beef
1 tbsp plain flour
1 crushes Garlic
1 Onion
2 Tomatoes
2 sliced Carrots
2 cubed Potatoes (sweet potatoes are really nice)
1 cup Beef stock
1 tbsp Soy Sauce
1 tbsp Tomato purée
1/2 cup Peanut butter
1 cup Frozen peas
2 tbsp sugar
Salt n pepper to season

Coat beef in flour and season with salt n pepper. Brown off in the frying pan.

Dump in slow cooker, with everything except the peanut butter and frozen peas. Leave to cook on low head for 4-8 hours, the longer the better. Add more stock if it starts looking too thick.

Half an hour before you want to eat, add the peas and peanut butter.

Serve with rice, or potatoes. Try with my homemade bread rolls!
