How to get the kids extra vitamins

My children are really picky eaters and I worry they aren’t getting enough variety of vitamins. It was recommended to me that we tried some powdered greens. 

Super Greens Powder; which is high in vitamins A, B, C, E, as well as Selenium, Copper, Manganese and Moringa. These all work together to prevent cell damage and protect the brain and mental health. 



Kale Powder; is high in vitamin B and K, as well as Folate, Iron, Calcium and Magnesium. These are needed for eye health, central nervous system, mental ability and cognitive prowess.

However, I found the powders don’t taste brilliant and are quite strong flavoured, so getting the kids to eat them within food is quite difficult. 

I have found a few recipes which hide the powdered greens really well and these are:

Peanut butter cookies

Peanut butter cookies

Ingredients:

200g peanut butter

175g caster sugar

1 large egg

1/2 tsp baking powder

1 tbsp cocoa powder

1/2 tsp green powder

Mix well

Makes 16, 180 degrees c for 12 minutes

Courgette Chocolate Brownies

Brownie

Ingredients:

2 eggs

1 tbsp vanilla essence

3/4 cup caster sugar

1/4 cup Apple sauce

1/4 cup plain flour

1/2 cup cocoa powder

1/4 teaspoon salt

2 cups courgette (peeled and grated)

1 cup choc chips (and another 1/2 cup to sprinkle on top)

1 tsp green powder

Method:

Mix eggs, vanilla, sugar and apple sauce. Leave for 5 mins. 

In separate bowl mix flour, cocoa powder, baking powder, green powder and salt. 

Brownie mix

Mix both bowls together. 

Fold in courgette and choc chips.

Pour into a 8”x8” pan and sprinkle 1/2 cup of choc chips over the top. 

Cook for 30-35 minutes at 180 degrees c. 

Gingerbread Energy Balls

Gingerbread energy ball

Ingredients:

100g unsalted cashews

50g pecans

8 dates (chopped)

1/2 tsp ginger

1/2 tsp cinnamon

1/2 tsp green powder

Mix in food processor

Press into balls

Making energy balls

Refrigerate. 

These are a few of my recipes I have discovered work well with the greens powders, but any strong flavoured mix should work.
