Low calorie, low carb dinners to go with Exante meal replacement. Part 1

Whether you are doing the extreme weight loss of “total solutions“, like my husband, or the “flexi plan”, like me, you will need to have some meals once in a while (on the total solutions you have a food week every 4th week). You should aim for between 200-400 calories and under 30g of carbs. Here are a few recipes to trial:

Ham and mushroom omelette

  • 2 eggs
  • 2 slices of ham
  • 50g mushrooms
  • 5 cherry tomatoes
  • Thinly slice the ham and mushrooms and mix with the eggs. Slice cherry tomatoes.
  • Spray frying pan with fry light spray and pour omelette mixture into pan. Cook gently for a few minutes then add the cherry tomatoes and flip the omelette.
  • Cook for a further few minutes until it is cooked through.
  • Tomato, avocado and rocket Bruschetta
    • 5 cherry tomatoes
      1/2 avocado
      1/4 lemon juice
      25g rocket
      2 slices sourdough

    Toast the sourdough

    Mash the avocado, mix in lemon juice. Spread over the bread and put rocket and sliced tomatoes on top

    Turkey Jerk and Mango Salsa

    • Turkey breast
    • Jerk paste
    • 1/2 mango
    • 5 cherry tomatoes
    • 1/4 cucumber
    • 1/4 lime juice
    • Lettuce
  • Marinade the turkey in the jerk paste for at least 30 minutes. Then grill the turkey.
  • Mix the rest of the ingredients together and serve with the turkey.

    1. This looks good. Am cutting down my carbs and upping my protein to try to lose weight but it isn’t working at the moment!
