Coconut curry salmon with noodles #foodiefriday

This weeks yummy family meal is my coconut curry salmon noodles, it is mild enough that the children enjoy it, but beautifully flavoured so could even be served at an adult dinner party.

The recipe is:

1 salmon slice per person

Korma curry paste

100ml milk

100ml chicken stock

1 potato cut into 1cm cubes

Green beans



1 packet of ready cooked noodles per person
Pre cook the potato, carrot and green beans until potato is cooked

Fry the salmon for 5 minutes, add the onion and a table spoon on korma paste. Stir well.

Add the milk and stock and stir occasionally until salmon is cooked and sauce reduced.

Add the pre-cooked noodles and serve. Delicious hot or cold!
