Chicken lasagne recipe #foodiefriday

Here is a simple yet yummy recipe, made from store cupboard ingredients, adjust the quantity for the number you are feeding:

Chicken

Tinned baked beans

Tinned mixed pulses

Chopped tomatoes

Veg

Cheese (mozzarella is best but cheddar works fine)

Lasagne sheets


Chop the chicken into small cubes and fry with the veg (onion, carrot whatever you want to put in)

When chicken is cooked through add the tinned beans and tomatoes and stir well


Soften each lasagne sheet in boiling water. You don’t have to do this step, but since the chicken is already cooked you will run the risk of the pasta being under-cooked


Place a layer of chicken mix on the bottom of the dish, followed by a layer of cheese and a layer of lasnage sheets


Repeat layers, until final layer is chicken mix and cheese


Cook in oven, 180 degrees C, for 30 minutes or until hot through.

You can make the chicken mix spicy if you like by adding chilli’s, or I’ve seen it made with enchilada sauce and tortilla layers, you can use cheese sauce instead of cheese layers. Adapt it to make it your own! Enjoy!
