Pineapple upside-down cake

I bought a huge pineapple from the market this week, so what better to do with it than turn it into an upside-down cake!!

The recipe I use is really easy:

  • 175g butter
  • 175g caster sugar
  • 2 eggs
  • 175g self raising flour
  • Pineapple
  • 2 tbsp Syrup (I use maple, but golden syrup is just as yummy)

Mix the butter, caster sugar, eggs and flour into a normal cake batter.

Slice the pineapple and lay it at the bottom of your tin add the syrup over the pineapple

Cover with the cake batter

And cook at 160 Celsius for 40-45 minutes. Then turn it out onto a plate and serve. Delicious hot or cold.
