I bought a huge pineapple from the market this week, so what better to do with it than turn it into an upside-down cake!!
The recipe I use is really easy:
- 175g butter
- 175g caster sugar
- 2 eggs
- 175g self raising flour
- 2 tbsp Syrup (I use maple, but golden syrup is just as yummy)
Mix the butter, caster sugar, eggs and flour into a normal cake batter.
Slice the pineapple and lay it at the bottom of your tin add the syrup over the pineapple
